I liked using Lion Brand Thick and Quick Wool Ease for my first few projects. Squishy, thick, knits up fast on 15s or 17s. :)

My favourite is Merino Wool. I made my Harry Potter scarf with it (I can't remember the brand but most merino I've touched was very cozy). It's soft and... aaaaah I'm almost looking forward to winter :p
